INGREDIENTS YOU NEED
- Steak: You need a soft cut of steak to make this dish. I personally prefer top sirloin because it is not that expensive, but you can use New York strip, flank or skirt steak as well.
- Tamair: You can use soy sauce or coconut aminos instead.
- Brown sugar substitute: This provides just a bit of depth and some sweetness to the sauce. You can use my homemade brown sugar replacement or one in the store.
- Sesame oil: Be sure to use toasted sesame oil.
- Sesame seeds: Toast these just enough by heating them in the skillet while preparing the steaks.
- Fresh cilantro: Throw in some fresh cilantro, scattering on top and serving for garnish. Feel free to skip this completely or substitute it with green onions.
- Kitchen basics: Garlic, ground ginger, and red pepper flakes.
EXPERT TIPS
Hot skillet: The trick to a great sear on your steak bites is to get your skillet very hot. I prefer to use a cast iron, but a good stainless pan will work as well.
Cook in batches: To get that great, crispy sear, don’t overcrowd a pan. If you put too much steak bites in the pan at once, it will steam instead of getting a nice brown color. Cook the steak bites in batches if you are making a large batch.
Even sizes: But make sure your steak bites are quality evenly sized cuts. Also the time required to cook might differ based on the size you chop and how hot the skillet is.

Ingredients
1 ½ lbs sirloin steak
¼ cup tamari or soy sauce
1 tablespoon brown sugar substitute
2 cloves garlic minced
½ teaspoon ground ginger
¼ teaspoon red pepper flakes
2 tablespoon sesame oil
2 teaspoon toasted sesame seeds
chopped cilantro for garnish
Directions
- 1. Cut into bites: Cut the steak into small cubes no bigger than 1 inch in size. Try to cut them all as close to the same as possible so that they cook equally. Place in a medium bowl.
- 2. Prepare marinade: In a small bowl, combining tamari some sweetener, minced garlic, grated ginger and red pepper flakes, with a whisk.
- 3. Marinate the meat: Pour marinade over steak bites and toss to coat. Let the meat marinate for 25 to 30 minutes at room temperature or up to 2 hours in the refrigerator.
- Seared steak bites: In a large skillet, heat over medium high. When hot, add 1 tablespoon of the sesame oil. Half of the prepared steak bites must be added in one layer with the help of a slotted spoon.
- 5. Sear the steak bites: Let them cook for some 2 minutes, flip them over quickly and cook on the other side for about one minute or a little more, so they are browned from the outside, a little raw pink in the middle. Place the cooked steak bites in a bowl, then repeat the process with the rest of the oil and the remaining pieces of steak.
- 6. Make the dipping sauce: Letting all that good steak cooked and out of the pan, pour the reserved marinade into it. Bring this to a boil then cook until it is reduced and deepened in its flavor, from 4 to 5 minutes. Pour over the steak bites or put on the side for dipping. Garnish with toasted sesame seeds and cilantro.
