Ssugar substitute

You are going to use it twice in the recipe! Use this first to sweeten your cookie dough. Then, set some aside in a separate bowl.

Vanilla extract

Step 1: Cream the butter

Begin by creaming the butter in an electric mixer or stand mixer with the powdered sugar substitute.

That’s why it is of importance to let the butter soften first. It’s much easier to mix when its softened!

Step 2: Mix the flour, salt, and vanilla

Add almond flour, vanilla extract, and salt (if your butter is unsalted).Stir everything together until everything is well mixed in the cookie dough. Scrape down the bottom and sides of the bowl to work in the butter mixture into the flour.

Step 3: Add pecans and freeze

Fold in chopped pecans. Folding something in means you are adding it without mixing it over. The chopped pecans are gently mixed into the cookie dough until fully combined.

Roll the dough out into equal-sized balls and then place on a baking sheet with parchment paper. Then refrigerate the balls of dough for about 30 minutes before baking. Meanwhile, preheat the oven. Let them chill in the freezer for now

Step 4: Bake and coat the cookies

Put the frozen cookies and cold baking sheet in the oven that has been preheated and bake the cookies for approximately 12 minutes.

When the cookies are done baking, let them sit out and cool for a while. Later on, roll the cookies into the powdered sugar substitute.
